Helen’s Gooey Chocolate Chip Cookies

Those in the UK may have heard of Ben’s Cookies, my all time favourite cookies originating in Brighton on the South Coast of England. The centre of a Ben’s Cookie oozes with gooey cookie dough and melted filling (my favourite being white chocolate or peanut butter) while sustaining a light crisp on the outside. Oh they are truly divine and guess what? I’ve managed to create my own so there’s no need for me to move back to rainy England after all! Yippee!

Ingredients:

125g butter
1 cup brown sugar
1/4 cup caster sugar
1 egg
1 tsp vanilla essence
1 cup self-raising flour
3/4 cup plain flour
1 tsp baking powder
1 cup chocolate chips

Method:

1. Preheat oven to 160c degrees

2. Melt butter in saucepan and set aside to cool slightly

3. Pour melted butter into large bowl, stir in brown sugar and caster sugar until smooth and sugar is dissolved

4. Lightly beat egg and stir into sugar mixture along with the vanilla essence

5. Sift flours and baking powder together in a small bowl

6. Gradually mix in sugar mixture until combined

7. Stir through chocolate chips of your choice. White is a personal favourite of mine.

8. Drop rounded tablespoons of the mixture into a lined baking tray

Note: these will expand and a tablespoon makes 10 HUGE cookies so you may want to reduce the size a little if not a “big eater” – where’s the fun in that?

9. Bake for 12 minutes or until golden and remove from oven

Note: the dough will still be soft and look uncooked but don’t let this fool you. They will harden when cooling and baking them for longer won’t give you the soft centre 

10. Allow to cool on baking tray for 3 minutes before transferring them to a wire rack to cool completely

11. See if you can just have one. I guarantee you’ll go back for more. YOLO 😉
